[The Wine Spies] Followed my normal Pinot winemaking: fruit completely de-stemmed and lightly crushed, caps allowed to rise on native yeast in small fermenters, no active temperature control, inoculated with selected yeast toward the end of the ferments, used relatively infrequent punchdowns and long maceration, pressed in a traditional basket and sent wine to barrels without settling.
