[Gastronomie-sf.com] Gastronomie: April 2005: I was impressed with how much attention he paid to the textures in addition to flavors - in fact, as I started reading the recipe, I thought the prosciutto would be a jarring addition until he explained the thinking behind it, and I was sold. I also loved the beautiful plating, and the fact that the recipe is pretty approachable and not too difficult to put together.
