I was reminded of my visit to Daylesford around this time last year, where, a little out of town, the influence of the region's Swiss-Italian settlers lives on in a number of buildings and in pockets of cultivated landscape, most notably at Lavandula, the lavender farm in Hepburn Springs. Run as a dairy farm for one hundred and fifty years by the Tinetti family, I had the best goat I've ever eaten there and was blown away by how well the landscape had been, not tamed exactly, but negotiated.
